Super delicious Chicken Burrito
After popular demand, here it is:
Our simple but super tasty, chicken burrito.
Ingredients
- 2 Chicken fillets
- 1 Lime (juice)
- 2 Peppers (Green and Red)
- 2 Spring onions (green and white separated)
- 1 avocado
- 1 bowl Rice (leftovers or freshly cooked) (we use leftover from the previous day)
- 1 can Black beans
- 1 Hot pepper (optional)
- 2 tbsp Soy sauce
- 1 Tomato
- 1/2 bunch Coriander
- 1 Chopped lettuce
- 1 tbsp Sour cream (per burrito)
- 2 cloves chopped garlic
- 1 tbsp White vinegar
- 2 tbsp Rapeseed oil
Spices
- 1 tsp Ground coriander seeds
- 1 tbsp Ground cumin
- Salt to taste
- 1 tbsp Paprika powder
- 2 tsp Black pepper
- 1 pack Large tortillas
Instructions
Rice and veggies

Drain most of the liquid from the black beans and add to a small pan. Heat for 2-3 minutes on medium heat. Then add rice and occasionally stir under low heat until mixture is heated.

Chop the white part of the spring onions and the peppers and add to a frying pan on medium heat with 1 tbsp of rapeseed oil and the minced garlic. Occasionally stir, while on low heat.
Avocado Salsa Salad

Chop avocado, lettuce, coriander, green spring onion part(,chilli pepper) and tomato into small cubes. Add 1/2 lime juice and 1 tbsp of vinegar, as well as salt and pepper to taste. Then toss the salad well.
Chicken

Slice chicken into 4 -5 strips. Then marinate chicken in 1/2 lime juice, paprika powder, chopped garlic, 1 tbsp black pepper, cumin, coriander seeds for at least a few hours in the fridge.

Heat some rapeseed oil on medium-high heat and add the chicken when the oil is hot. Hard fry the chicken from all sides, then pull the chicken apart into inch pieces, add a splash of soy sauce (1-2 tbsp) and toss for another minute in the pan. Ensure chicken is piping hot throughout before serving.
Finally, put it together

Now add the bean rice, the avocado salsa salad, a spoon of sour cream and some chicken to a heated (2 mins in the oven) tortilla sheet and fold first at the top and bottom and then roll into a small parcel.
TIP: The burrito will keep very well together when wrapped in aluminium foil.
