Dry Beef Bucati with spicy Pangrattato

Fusilli Bucati with beef, garlic, olive oil, chilli flakes, spicy pangrattato, fresh tomato and basil. This pasta dish is easy to make and will impress anyone as it tastes indescribable. 

Ideal for this dish are pasta types like the Fusilli Bucati we used or other tube shaped types like macaroni.

(Parmigiano goes also well with this dish)

Ingredients

  • 1 lb Pasta (tubular like macaroni) we used Fusilli Bucati
  • 2 chopped tomatoes
  • 1 bunch chopped fresh basil
  • 4 tbsp olive oill extra virgin
  • 1 lb ground beef (5-10% fat)
  • 3 cloves chopped garlic
  • 1-2 tbsp chilli flakes to taste
  • Salt & Pepper to taste
  • 1 Bread (no whole seed bread, unless that's what you're into)

Instructions

Pangrattato

  1. Pre-heat the oven at 200°C and slice the bread and place the slices flat in an oven tray. 

  2. Drizzel olive oil and sprinkle some chilli flakes over the bread and place in the oven for 20-30 minutes. Ensure throughout that it does not burn (every 5-10 minutes). While pangrattato is in the oven you can prepare the pasta.

  3. Take the bread slices out when they look golden and roasted (not burnt) and let them rest for 10 minutes, then place in a pot, bowl or ziplock bag. Then crush the bread into a rough dust with a smaller pot or rolling pin.

Pasta

  1. Add 2 tbsp of olive oil to a pan and heat on a high heat. Add the minced meat after a minute and stir fry with a pinch of salt and pepper for 5-6 minutes.

  2. When meat browned, remove it from the pan. Now add 2-3 tbsp olive oil into a fresh pan and heat the minced garlic and chilli flakes on medium heat. Fill another pot with salted water and bring it to a boil for the pasta.

  3. Add the pasta to the boiling water (use ideally a tubular pasta type like macaroni, bucatini or the fusilli bucati we used. Cook for about 10-12 mins (or see instructions).

  4. Add the meat back to the garlic and chilli flakes and stir for 1-2 minutes. Then drain water from the pasta, when it's ready and add the pasta to the meat and garlic. 

  5. Add the chopped basil and tomatoes, then stir the pasta into the mixture without heat until the ingredients are evenly distributed.

  6. Place pasta on a plate and add a handful of your freshly made pangrattato. Now its ready to serve so go on and impress your family and friends.
