Tastiest Chicken Adobo with Garlic Rice
Adobo is the national dish of the Philippines and there, enjoyed with the common garlic rice. Whenever I make Adobo my friends cannot believe how so much flavour can be achieved with such a simple dish.
The chicken is cooked in a soy and vinegar based sauce which is tangy, sweet and very rich.
- 1 cup Soy Sauce
- 1 cup White vinegar (Cane vinegar) (Rice vinegar works too)
- 4-5 Chicken thighs
- 4-5 Chicken drumsticks
- 4 tbsp Canola, vegetable or peanut oil (we used peanut oil)
- 5 cloves Garlic (Peeled and minced)
- ¾ cup Water
- 5 Bay leafs
- 2 tbsp Sugar (we use brown sugar)
- 3 tbsp Black pepper (whole)
- 1 tbsp Ginger (minced)
- 2-3 Thai chillies (or for a milder version, Jalapeños) (chopped)
Traditional Garlic Rice
- 2 Cups Rice Rice made the night before
- 5 cloves Garlic
Fried Vegetables (optional )
- 3-5 Green and Red bell peppers (sliced into strips)
- 1 half Onion (sliced)
- 3-5 Scallions
- 1 tbsp Oil (we used peanut oil)
- 2 tbsp Soy Sauce
- 1 tbsp Sesame Seed
- 1 tbsp White or red Vinegar
Combine soy sauce, vinegar, ginger, minced garlic, bay leafs, pepper corns and chopped chilli in a bowl or zip-lock bag and marinate the chicken ideally over night (but at least 2 hours).
Heat a large pan with oil on high heat. While the pan is heating, remove the chicken from the marinade and let the remaining marinade drip off. When the pan is hot, hard fry the chicken on both sides for 2-3 minutes until the skin gets crispy.
Turn the heat to medium low and add the remaining marinate and ¾ cups of water. Then cover the pot and let it simmer for about 35 minutes.
Turn the chicken and simmer another 25 minutes and occasionally turn the chicken. The sauce should begin to glaze.
While the chicken is cooking, prepare the rice and vegetables.
After a total of 1 hour of cooking time the chicken is ready to be served.
Garlic Rice (also works with normal fresh rice)
Use rice that has been cooked the day before, as it has lost some of its moisture.
I sometimes buy take out rice and let it dry if I didn't prepare any the day before.
In that case, spread out the rice on a tray or plate, so it dries quickly while you prepare the Adobo
Fry the garlic in oil for 3-5 minutes on medium high heat under constant stirring. Make sure it doesn't burn or turn black.
When garlic is golden, add the rice and stir fry for a few minutes, until everything is well mixed and hot.
Fried Vegetables (works very well but optional )
Stir fry all the ingredients for 4-5 minutes and serve with Adobo and rice.
It is not traditional or necessary but goes amazingly with the Adobo.
